Two weeks ago I joined Jon from Earth Bread& Brewery and Ryan from McKenzie’s to craft a new installment of our Trois Enfants series of beers. The beer we brewed this time around turned out to be a bit different from our other creations. For the first time in our collaborative history, we didn’t brew a Saison. Rather, we brewed a total hybrid of styles, and the resulting beer is named Conifer. On the surface, Conifer is essentially an American pale ale brewed with Douglas Fir branches/needles. Once you dig a bit deeper, you find a total confluence of brewing styles that spans time and geography.
Conifer was mashed atop a bed of Douglas Fir branches in a fashion similar to Finnish sahti beer, hopped aggressively with Columbus and Cascade hops in a fashion similar to American west-coast IPAs, flavored with Belgian D2 syrup in a fashion similar to, well, Belgian ales, and then fermented with an English ale yeast (you know, like an ESB).
