American ESB. 4.7%A throwback to our opening taplist. Brewed with a touch of rye malt and a blend of Carmel malts, and hopped with Cascade.
-Notes of lemon zest, pear, barnyard, hay, guava, juicy fruit, and earth.
Our Four-Grain Saison. 4.8% Brewed with rye, oats, wheat and Cascade hops. This is our most accurate interpretation of traditional Saison.
-Notes of tangelo, kiwi, dank, nectarine, honeysuckle, and grapefruit.
Our American Pale Ale. 5.5% Brewed with oats. Hopped intensely with Simcoe, Centennial, and Amarillo. Hazy, juicy, and imminently crushable.
-Notes of bright citrus, cotton candy, underripe peach, key lime, and passionfruit.
Blackberry/Lemon Balm IPA. 7.1% Brewed with oats. Conditioned extensively with loads of local blackberries, lovingly processed in house, then dry-hopped aggressively with Galaxy and a hefty bunch of locally sourced lemon balm.
-Notes of hay, lemon, clean malt, white sage, off dry Riesling, and white tea.
Smoked Shiitake Saison. 5.4% Brewed with 100% Pilsner malt and heaps of apple wood smoked shiitake mushrooms from our pals at Mycopolitan mushroom company in Philadelphia. Fermented in our open top oak fermenters.
-Notes of rose blossoms, Palmarosa grass, papaya, tangerine, and cotton candy.
Squid Ink IPA. 7.0% Brewed with oats and a kettle addition of squid ink. Hopped singularly and intensely with the mighty Mosaic. Captivating!
-Notes of lime balm, underripe nectarine, fields of fresh herbs and peach jam
Stinging Nettle Saison. 5.2% Brewed with malted wheat and copious amounts of fresh, local Stinging Nettle. Fermented in our upright open-top oak fermenters. Hopped gently with Hallertau Blanc. Delightfully balanced and dry.
-Notes of Belgian waffles, lightly roasted coffee beans, black tea, and toast.
The Sun Will Force Us All Underground:
Tiny Stout. 2.4% Brewed with a plethora of specialty malts and gentle kettle additions of Citra and Simcoe.
-Notes of rose hips, raspberry jam, kumquat, fruity pebbles, and rooibos.
Blueberry/Rhubarb Saison. 6.6% Brewed with Golden Promise, oats, rye, and spelt. Fermented in our open top oak fermenters with fresh local rhubarb and our magickal house saison culture, then conditioned for many moons on top of loads of house processed local blueberries in stainless steel.
