About Us

Our Story

Our roots are in homebrewing, shaped by the hoppy pale ales of the West Coast and the beautifully dry farmhouse ales of France and Belgium. That curiosity and obsession is still at the core of everything we make.

Jean Broillet IV came up through the ranks of the PA craft brewing world and fell hard for the brewpub model; the idea that making beer in one room and serving it in another creates something special - a daily connection to the people drinking your beer that you just can't replicate anywhere else. That conviction is baked into how we operate to this day.

Jean opened our original Brew Café in Ardmore in 2012 in a 1925 physician's office we gutted and rebuilt by hand into a brewery, gathering place, and community anchor, where our beloved Bologna & Cheddar panini was created. In 2015, we opened our 13,000 square foot production facility and restaurant, expanding our capacity while deepening our commitment to providing a complete customer experience, and further tying us to the Ardmore community we love so much. In 2020, we opened St. Oner’s, A Tired Hands Joint on Frankford Ave in Philadelphia’s Fishtown neighborhood.

Our Beers

Along the way, we've had the privilege of leaving a few marks on the broader beer world… from helping to pioneer the “hazy” with our beloved Hop Hands, our American Pale Ale, to inventing the Milkshake IPA in a lark alongside our friends from Sweden, Omnipollo, a style that has since taken on a global life of its own that far, far, far exceeded our wildest imagination. 

We've produced hundreds, nay, thousands of distinct beers and our restless curiosity remains fully intact today and will tomorrow as well.

THBC has been recognized for its work throughout the years: RateBeer named us Best New Brewery and Best Brewpub in Pennsylvania, and placed us in the Top 5 New Breweries in the World. We've earned spots on their Top 100 Brewers in the World list multiple years running, with individual beers reaching the Top Beers in the World. The James Beard Foundation (one of the hospitality industry's highest honors) recognized our Fermentaria as a semifinalist for Outstanding Bar Program.
